 After cooking, the light colored opah meat is very tasty and has a soft consistency. The fat has a pinkish tinge. The dark colored meat is not tasty. The opah is a good table fish. Cured `balyks' can be prepared from it. Dark meat and other waste obtained during dressing should be used for fish meal.
